In BC, pigs are raised carefully by only twenty eight family farms. We are proud to be one of those farms.

This industry is not a big one, producing only about 10% of the pork consumed by British Columbians, but it is significant and different from those in other regions. Small family farms carefully raise pigs to high standards for specialty markets in BC, whether for local butchers, independent grocers or your favourite restaurants.

ANATOMY OF A PIG

Here's a handy reference guide to the various cuts of pork. For preparation ideas and cooking instructions visit our recipes section.

1. SHOULDER
Butt roast, ground pork, sausage.

2. LOIN
Centre rib roast, boneless loin roast, sirloin chops, rib chops, boneless loin chops, smoked loin chops, peameal bacon, back ribs, pork tenderloin, Canadian back bacon.

3. LEG
Fresh boneless ham roast, bone-in fresh ham, bone-in smoked ham, schnitzel.

4. PICNIC SHOULDER
Smoked picnic shoulder, fresh picnic roast, sausage, ground pork.

5. SIDE
Spare ribs, smoked sliced bacon.
